Not everyone loves squash but if you would like to make a squash side dish then this is a side dish everyone loves. To prep the squash you want to peel it and cut it in to 1 inch cubes. But because the skin is tough you can't peel it with a vegetable peeler you need to use a knife. I find it easier to cut the squash in quarters and then peel it. Then scoop out the seeds from the inside.Then boil the squash in water until tender and drain the water from it, for example if you have 2 squash that you are doing you add half a stick of butter, and quarter of a teaspoon of salt. Then mash up and serve. You can serve with brown sugar sprinkled on it to.
Acorn Squash
Acorn squash side dishes is a sweet dish squash that even the pickist eater will enjoy. It's a sweet buttery taste that almost makes it not seem like a squash side dish. What you need.
- 1 Acorn Squash
- 1 tablespoon of butter
- 2 tablespoons of brown sugar
- Maple syrup
- Take the seeds out of the squash, and cut in halves
- Preheat your oven to 350 degrees F
- Turn acorn squash upside down onto a cookie sheet and bake at 350 degrees F oven until it begins to get soft, it takes about 35 minutes.
- Remove squash from the oven and turn onto a plate so that the flesh is facing up. Place butter and brown sugar into the squash.
- Place squash in the oven at 350 degrees F oven and bake another 30 minutes.
- When you get ready to serve up drizzle maple syrup over the top of the squash and enjoy.

Although this squash is a eye sore because it's the shape of a football but weighs around 20 pounds. You want to prep it by doing a light scrub under cold water to get dirt and debri out. You want to use a strong knife or even a meat cleaver like said on the blog Daves Cupboard . Also you can place it in a bag and drop it. After you take the seeds and stuff out their is not as much as you think left.
Cut the squash into quarters and seed it. You want to sprinkle with half a teaspoon of nutmeg, cinnamon, then 1/4 cup of brown sugar sprinkle that on the squash also. Bake at 375 degrees F for about 50 minutes or until you can stab it with a fork just like a bake potato.
Then scoop out the squash into a bowl and add about a 1/2 cup of milk slowly while stirring with a electric mixer until you get a consistence you want.

I count both Acorn Squash and Butternut Squash on my list of favorite side-dishes!! I'll definitely have to try some Blue Hubbard Squash next time!!
